More Scrapbooking, Less Cooking!

My friend Tracy Roberts has just released a new ebook on slow cooker recipes. When I told her that we’re always looking for quick meal ideas during our favorite times of the year (LOAD anyone?!), she offered to pull together a little blog post for us. Here’s Tracy!

In the midst of working from home, home schooling two kids and trying to keep the house in some semblance of order, I confess that sometimes dinner is the last thing on my mind.

Freezer and once –a-month cooking aren’t the easiest things for me to do and I’ll admit that I’m a little lazy, however, I am able to put home cooked meals on the table quickly & easily by using my secret weapon.

When I heard that you all were holding a month long humdinger of scrapbooking goodness and I’ve got an easy fix that will save you time cooking dinner so you can show up for that scrapbooking get together.

Use a slow cooker.

Your slow cooker just might be one of the most underused tools in your kitchen but once you get the hang of it you’ll pull it out often.

I like to experiment with what I have the pantry to come up with new meals to try out on my family. Most come out fantastic!

I suppose here is where I should admit I have a slow cooker addiction. Can you relate? I have at least 4 but a couple are on their last legs so it’s time to start shopping for another one.

Why do I have so many? Well, after dinner the other day I brought a second slow cooker to the table. Since we had just eaten they were a little confused until I took off the lid and showed them the chocolate slow cooker cake I had prepared.

I dumped

  • a box of store bought cake mix,
  • a package of instant chocolate pudding,
  • a cup of chocolate chips,
  • 4 eggs,
  • an 8 oz. container of sour cream,
  • 3/4 cup oil and
  • a cup of water

Into my slow cooker, mixed it up well and cooked it on high for 3 hours.

My family was happy to top of a great dinner with warm chocolate cake with a dollop of vanilla ice cream to boot.
